Bircher Muesli with seedless blackcurrant jam

Ingredients

Life without bread in the morning is no life at all… we know the feeling! There are days when the only thing that gets you out of bed and into the world is that breakfast slice of toast, dripping with good jam… Except there is no crusty baguette, no toasted bread: you are bleary-eyed and your hands are shaking. No doubt about it, gloom is closing in. But that is without counting on La Chambre's Bircher Muesli recipe, which is about to put the spring back in your step! Surely you have a fromage blanc or a pot of yoghurt lurking at the back of the fridge? A last helping of muesli in the top cupboard you had never explored? A jar of jam? And a few fresh berries? Then off we go! Do note that this breakfast is far better if you remember to prepare it the night before.

INGREDIENTS FOR 1 PERSON

  • 100g fromage blanc or Greek yoghurt
  • 4 tbsp muesli with oat flakes, dried fruit (raisins, coconut, apple…), nuts (almonds, hazelnuts, pecans…) and seeds (sunflower, pumpkin, linseed…)
  • 2 tbsp Seedless Blackcurrant jam
  • Fresh blueberries

Instructions

  1. The evening before, pour the muesli into a large bowl, then add the fromage blanc and the Seedless Blackcurrant jam. Stir everything together. Cover with cling film and leave in the fridge overnight. Set aside a few seeds, almonds and hazelnuts.
  2. In the morning, scatter over the almonds, hazelnuts and seeds. Finish with fresh blueberries and enjoy with a hot cup of tea.
  3. Now isn't life beautiful?

Tip: this recipe works with the jam of your choice (seedless redcurrant, seedless raspberry, tasty strawberry, rhubarb…) and any fresh seasonal fruit (raspberry, strawberry, peach, apple, pear, banana, fig…).
