Galette des Rois — the French King Cake: this year, the charm isn’t the only surprise.

Pistachio Galette des Rois: how to give it a twist

A galette is puff pastry, frangipane and a hidden charm. The rest is yours to write. One spoonful of spread over the frangipane before you close the pastry is enough to change everything.

There is no need to rework the recipe: add a layer, close it, glaze it. The galette stays a galette — it simply tastes like nothing anyone expects.

Pistachio is the most natural pairing: it belongs to the same family as almond, so it extends the flavour instead of fighting it.

For those who find frangipane a little too tame

Salted butter caramel takes the opposite route: the salt wakes up the almond and gives the galette a length it does not usually have.

A thin layer is enough — the caramel spreads as it bakes and coats the inside of the pastry.

It is the filling that gets the most comments at the table, and the one children ask for again the following year.

Two fruitier pairings

Williams pear and roasted almond jam — the classic pear-and-almond pairing, the one that accompanies frangipane without ever covering it.

Sweet orange jam — the citrus cuts through the richness of the pastry and lightens the whole thing. It is the version preferred by anyone who finds the galette heavy.

Both go on in a thin layer, exactly like the others.

What should you bring with the Galette des Rois?

You rarely turn up empty-handed on Epiphany. A jar gets shared straight away, and leaves with whoever brought it — or not.

For a larger gift, the build-your-own box lets you pick the flavours yourself, and arrives in its toile de Jouy case.

Four jars, four choices: enough for the whole table.

Everything you need to know about the Galette des Rois

Which filling can you add to a Galette des Rois? A spread or a lightly sweetened jam, in a thin layer over the frangipane before closing the pastry.

Can you fill a shop-bought galette? Yes — warm it through and add the filling on the plate. It is the simplest way to personalise a ready-made galette.

When do you eat the Galette des Rois? On 6 January for Epiphany, and throughout January in practice.
