Exotic Cheesecake

What if we crossed the Atlantic to try the famous cheesecake? La Chambre gives an exotic twist to this American pastry classic with Mango Passion jam, Guava jam, or Lychee Mango Pineapple spread. Try all three versions!
INGREDIENTS FOR 6 PEOPLE
for a 20 cm diameter round cake tin
- One 130 g packet of Breton butter biscuits
- 50 g soft butter
- 1/2 lime
- 300 g cream cheese, such as Philadelphia
- 3 eggs
- 125 g sugar
- 10 cl crème fraîche
- 100 g exotic jam: Mango Passion, Guava, or Lychee Mango Pineapple spread
EQUIPMENT
- A mixing bowl
- A 20 cm diameter round cake tin
- Parchment paper
- A tablespoon
- An electric mixer
- A spatula
Instructions
- In a mixing bowl, roughly crush the Breton butter biscuits by hand.
- Mix them with the soft butter by hand.
- Line the bottom of the cake tin with parchment paper. Press the mixture down firmly with the back of a tablespoon or a ladle, so that nothing falls out when you turn the tin over.
- Using a spatula, spread a thin layer of Mango Passion, Guava, or Lychee Mango Pineapple jam over the biscuit base.
- Preheat the oven to 190°C.
- Squeeze the juice from the half lime.
- With an electric mixer, beat together the cream cheese, cream, sugar, eggs, and the zest and juice of the half lime, until you get a smooth batter.
- Pour the batter into the tin.
- Bake for 35 minutes.
- Leave to cool on a wire rack outside the oven. Then gently unmould.
- Spread another layer of jam on top of the cake, making sure it looks smooth.
