Which confit with which foie gras

The five confits in this selection do not suit the same foie gras. Here is how we pair them:

  • Sauternes Confit: the classic pairing, with a mi-cuit duck foie gras. Its floral, honeyed notes extend those of the sweet wine without covering the foie.
  • Fig & Peppers Chutney: with pan-seared duck foie gras. Fig is the traditional accompaniment, and the pepper holds up to the heat of the pan.
  • Onion, Truffle & Pomerol Confit: with a whole duck foie gras or a terrine. Its woody, winey notes suit the richest preparations.
  • Mango & Spices Chutney: with goose, which is milder. The sweetness of the fruit and the heat of the spices lift a foie gras with a more discreet taste.
  • Rhubarb & Malt Beer Confit: with a terrine or a mi-cuit foie gras. The tartness of the rhubarb cuts through the richness, and the malted sweetness rounds it off.

Our most-gifted confits

Fig walnut cognac, onion grape citrus and sauternes are the three that appear most often in our festive gift boxes.

Also good on a cheese board

The same confits work on an aged comté, a fresh goat cheese or a blue, which saves opening two different jars.
