Spiced Apple Tart with Pear & Yuzu Jam
This is unquestionably the best homemade apple pie you will ever make! Enjoy the buttery flaky crust and the generous filling of wonderfully tender, lightly spiced apples.
Ingredients
It's tart season! Which means it's the time of year when our sweet tooth is in full swing. Discover our version of the old-fashioned apple pie, and it is unquestionably the best homemade apple pie you will ever make!
6 or 7 Granny Smith or Pink Lady apples, or a mix of both. The key is that they should be firm enough not to fall apart during cooking.
1/2 jar of Pear & Yuzu Jam
1 tbsp white sugar (optional)
1 pinch of salt
1 tbsp ground cinnamon
1/2 tsp nutmeg
2 or 3 cloves or 1/2 tsp ground cloves
2 or 3 cardamom seeds or 1/2 tsp ground cardamom
1/2 tsp ginger
1/2 tsp allspice
1 lemon zest
Instructions
- Preheat your oven to 180°C
- In a large bowl, mix your apples with the Pear Yuzu jam, salt, cinnamon, nutmeg, cloves, cardamom, ginger, allspice and lemon zest. Then mix so that your apples are well coated. You can easily make this mixture the day before. It will only give it more flavour!
- Caramelise your apples in a large frying pan with deodorised coconut oil or a generous knob of butter.
- While your apples are stewing, take one of the two pastry discs out of the fridge and roll it out with your rolling pin. Place it in a buttered tart dish.
- Once the apples are nicely golden, slightly softened and a light caramel appears, place them on your pastry base and finally take the last pastry disc out of the fridge. Roll it out with your rolling pin and cover your apples with this pastry. Don't worry about the pieces of pastry hanging over the edge of your dish. Imperfection is the key word for this recipe!
I therefore recommend pressing the two pastry layers together so as to seal the apples inside.
- Using a knife, slit the centre of your pastry. You can either make a small hole or 4 slits to form a star shape, allowing your pie to vent.
- Bake for 40-45 minutes. When your pie has a lovely golden colour, take it out of the oven. It's ready!
Enjoy served with a scoop of vanilla ice cream or a spoonful of crème fraîche.
