April Fool !!!!
Ahoy sailors, set sail for a treasure hunt of treats with La Chambre and catch the April Fool, in the form of shortbread cookies filled with raspberry jam.

Ingredients
INGREDIENTS FOR ABOUT 15 JAM-FILLED SHORTBREAD COOKIES
- 250 g flour
- 1 egg
- 100 g softened butter
- 50 g ground almonds
- 100 g caster sugar
- 1 sachet vanilla sugar
- icing sugar for finishing
- 1 jar of seedless Raspberry jam
EQUIPMENT
- A mixing bowl
- A whisk or electric mixer
- Cling film
- A rolling pin
- A fish-shaped cookie cutter
Instructions
- In a mixing bowl, whisk the softened butter with the caster sugar and vanilla sugar vigorously, using a whisk or electric mixer, until the mixture turns pale.
- Add the egg. Mix again.
- Fold in the flour and ground almonds. Work the dough well until it forms a ball.
- Wrap the ball of dough in cling film to prevent it from drying out. Place in the fridge for 30 minutes.
- 30 minutes later, flour the work surface and roll out the dough with a rolling pin until it is neither too thin nor too thick: about 3 mm thick.
- Using a cookie cutter, cut out pretty fish shapes. In half of the cookies, cut a hole for the eye at the head.
- Bake for 10 to 15 minutes at 150°C. Watch the colour of the cookies, which should stay white and not brown.
- Leave to cool on a wire rack.
- Then spread a thin layer of seedless Raspberry jam on the plain shortbread and cover with the pierced one. Finally, dust with icing sugar.
- APRIL FOOL!!!!!!
