Spicy Apple and Clementine Jam Recipe

Ingredients

Because jam-making is a treat for gourmands of all ages, La Chambre is delighted to share this delicious recipe for Spiced Apple and Clementine Jam, created by Marie, aged 14, who came to discover the world of the company during a work placement!

INGREDIENTS FOR 4 JARS OF 250G

  • 3½ apples
  • the juice of a small lemon
  • 500g white granulated sugar
  • 12 clementines
  • A pinch of quatre-épices (mixed spice)

EQUIPMENT

  • A vegetable peeler
  • A paring knife
  • A mixing bowl
  • A large bowl
  • A jam pan
  • A silicone spatula
  • A plate placed in the refrigerator
  • 4 jars of 250g (or smaller jars)

Instructions

1) Peel the apples with a vegetable peeler before coring them. Then, using the paring knife, cut the apple quarters into small pieces.

2) Peel the clementines down to the flesh. Remove all the white pith and seeds. Working over a large bowl, cut them into small pieces and keep all the juice.

3) In a large bowl, combine the apple and clementine pieces with their juice, the lemon juice, the 500g of sugar and 1dl of water. Cover and leave to rest overnight.

4) The next day, pour the fruit mixture into a jam pan and add a pinch of quatre-épices. Bring to the boil while stirring with a spatula for half an hour. Then do the cold plate test: drop a little jam onto a plate chilled for 5 minutes in the refrigerator. If the jam sets, it's ready! If it runs, continue cooking a little longer.

5) Once the cooking is checked, ladle the mixture straight away into the pre-sterilized jars.

6) This Spiced Apple and Clementine Jam is delicious with speculoos biscuits!
