Sweet & Savoury Goat Cheese, Prosciutto & Pear-Vanilla Croque
Ingredients
- 4 slices of brioche bread (or thick sandwich bread)
- 2 to 3 tablespoons Pear & Vanilla jam
- 1 log of goat cheese or fresh goat cheese
- 4 slices of prosciutto (speck or Parma ham)
- A few arugula leaves
- A little butter
- Pepper
Instructions
Start by spreading one side of each slice of bread with the Pear & Vanilla jam. Arrange slices of goat cheese on two of the slices, then add the prosciutto. Season lightly with pepper to taste, then close the sandwiches with the remaining slices.
Lightly butter the outside of the sandwiches, then brown them in a pan or a sandwich press. Cook for about 3 to 4 minutes on each side, until the bread is crisp and the cheese has melted.
When serving, add a few arugula leaves inside or on the side for a touch of freshness and a light peppery contrast.
A balance of flavours
This recipe relies on a subtle balance. The sweetness of the pear and the roundness of the vanilla soften the character of the goat cheese, while the prosciutto adds a salty, slightly umami depth. The arugula, in turn, lifts the whole dish with a hint of bitterness.
Variations and suggestions
For a more refined version, you can swap the goat cheese for truffled brie or an aged Comté. Crushed walnuts will add crunch, while a drizzle of reduced balsamic vinegar will intensify the sweet-and-savoury contrast.
Served with a green salad or a few grilled vegetables, this brioche croque makes a simple, elegant dish, perfectly suited to an updated everyday cuisine.
