Mince Pie with Rosehip Jam, Dried Fruits, Spices & Whisky

Ingredients

Sweet pastry

  • 150 g soft butter
  • 80 g icing sugar
  • 1 beaten egg
  • 250 g flour

Mincemeat

  • 200g Rosehip jam or Fig Lime Thyme
  • 1 orange
  • 1 apple
  • 100g golden raisins
  • 100g currants
  • 100g flaked almonds
  • 100g hazelnuts
  • 2 tsp Christmas spices
  • 3 tbsp Whisky
  • 70 g unsalted butter

Instructions

  1. Preparing the pastry: Put the flour, icing sugar and soft butter in the bowl of your stand mixer until you get a sandy dough. Add the egg and mix again. Shape into a ball, wrap in cling film and leave to rest in the fridge.
  2. Soak the raisins in some of the Whisky until rehydrated. Roughly chop the hazelnuts and toast them with the almonds for a few minutes in a hot oven. Peel and dice the apple. Zest the orange. Mix all the ingredients, including the rosehip jam or Fig Lime Thyme, in a bowl and finish with the melted butter.
  3. Preheat the oven to 180°C. Roll out the pastry into muffin tins. Fill with mincemeat and cover with a disc of pastry.
  4. Bake for 20 minutes, let cool slightly and serve dusted with icing sugar.
