Mince Pie with Rosehip Jam, Dried Fruits, Spices & Whisky

Ingredients
Sweet pastry
- 150 g soft butter
- 80 g icing sugar
- 1 beaten egg
- 250 g flour
Mincemeat
- 200g Rosehip jam or Fig Lime Thyme
- 1 orange
- 1 apple
- 100g golden raisins
- 100g currants
- 100g flaked almonds
- 100g hazelnuts
- 2 tsp Christmas spices
- 3 tbsp Whisky
- 70 g unsalted butter
Instructions
- Preparing the pastry: Put the flour, icing sugar and soft butter in the bowl of your stand mixer until you get a sandy dough. Add the egg and mix again. Shape into a ball, wrap in cling film and leave to rest in the fridge.
- Soak the raisins in some of the Whisky until rehydrated. Roughly chop the hazelnuts and toast them with the almonds for a few minutes in a hot oven. Peel and dice the apple. Zest the orange. Mix all the ingredients, including the rosehip jam or Fig Lime Thyme, in a bowl and finish with the melted butter.
- Preheat the oven to 180°C. Roll out the pastry into muffin tins. Fill with mincemeat and cover with a disc of pastry.
- Bake for 20 minutes, let cool slightly and serve dusted with icing sugar.
