Fontainebleau recipe with strawberry jam

Fontainebleau, a dessert full of mystery
The history of Fontainebleau goes back to the 18th century, in the town of the same name. The creator of this recipe never patented it, so remains unknown to this day. That's why methods for making Fontainebleau sometimes differ; you can find it made purely from cream, or from a mix of cream and fromage blanc. Either way, Fontainebleau is an easy, indulgent, no-cook dessert.
The Fontainebleau strawberry recipe
Ingredients for 4 glasses:
- 300 g faisselle (fresh curd cheese)
- 30 cl full-fat single cream
- 80 g caster sugar
- Tasty Strawberry or Strawberry & Tonka Bean jam
Instructions
- Drain the faisselle in a fine sieve for 1 hour. Meanwhile, place the cream, mixing bowl and whisk in the fridge;
- Beat the faisselle to give it a smooth texture;
- Whip the full-fat cream into whipped cream until fairly firm;
- While continuing to whisk the cream, add the caster sugar, then fold in the faisselle in several additions. Be careful not to knock the air out of the whipped cream;
- Divide the mixture into glasses or small plates;
- Keep chilled in the fridge until ready to serve;
- Serve well chilled, with a generous spoonful of Tasty Strawberry or Strawberry & Tonka Bean jam and a few fresh fruits of your choice.
Other ways to dress up your Fontainebleau
Even though our favourite way to enjoy Fontainebleau is with red fruit jam, there are plenty of other ways to dress it up: an ultra-indulgent version with salted butter caramel, or a comforting version with mountain honey. Not forgetting the version that instantly transports us to the tropics: with our passion fruit jam.
For purists, a light dusting of icing sugar on top also does the trick perfectly.
