Chocolate Muffins with Speculoos Spread

Ingredients
- 125g flour
- 1 egg
- 40g melted butter
- 0.5 sachet vanilla sugar
- 0.5 handfuls chocolate chips
- 75g brown sugar
- 10cl milk
- 0.5 sachet baking powder
- 0.5 pinch of salt
- 6 tsp speculoos
Instructions
- Preheat the oven to 180°C
- Beat the eggs with the brown sugar and vanilla sugar in a bowl.
- Add the flour, baking powder, salt, milk and melted butter and mix well until you have a smooth dough
- Add the chocolate chips to the mixture and stir well
- Pour half of the mixture into silicone or buttered muffin tins
- Place 1 teaspoon of speculoos spread in each mould.Cover with the remaining mixture
- Bake for around 20 minutes until the muffins are golden brown
- Leave to cool when removed from the oven, then turn out of the tin
- Store the muffins in an airtight tin until ready to eat.
