Ingredients
For 1 cocktail
1 tablespoon of La Chambre Raspberry Lychee jam
10 cl (3.4 fl oz) of well-chilled prosecco
2 cl (0.7 fl oz) vodka (optional, for a stronger cocktail)
1 cl (0.3 fl oz) fresh lemon juice
A few fresh mint leaves
Ice cubes
Fresh raspberries (for garnish)
Instructions
In a shaker, mix the Raspberry Lychee jam with the vodka (if using) and the lemon juice.
Add a few ice cubes and shake vigorously for 10 seconds.
Strain the mixture into a champagne flute.
Slowly top up with well-chilled prosecco, pouring gently to preserve the bubbles.
Stir delicately with a spoon.
Garnish with a fresh mint leaf and a few fresh raspberries on a small cocktail pick.

For a non-alcoholic version, replace the vodka with sparkling lemon water.
