Matcha, Pistachio & Raspberry Financier
Succumb to the elegance of a Matcha, Pistachio, and Raspberry Financier, where the richness of brown butter meets the intensity of matcha tea and the crunch of pistachios.

Ingredients
150 g almond flour
50 g all-purpose flour
100 g powdered sugar
4 egg whites
100 g butter
2 tbsp high-quality matcha powder
1 pinch of salt
1 jar of Suprême de Pistache La Chambre
A few fresh raspberries
Instructions
Preheat the oven to 180°C (350°F).
Melt the butter in a small saucepan until it turns a hazelnut color, then let it cool slightly.
In a bowl, sift together the almond flour, all-purpose flour, powdered sugar, matcha powder, and a pinch of salt.
In another bowl, lightly beat the egg whites with a fork, without whipping them into stiff peaks.
Fold the egg whites into the dry ingredients, then add the browned butter. Mix until you have a smooth batter.
Grease and flour financier molds or mini tart pans.
Pour a little batter into each mold.
Place a small spoonful of pistachio insert in the center of each financier, then add a few raspberries on top. Cover with the remaining batter.
Smooth the tops with a spatula.
Bake for about 12-15 minutes.
Let them cool slightly before enjoying.
For an even more indulgent touch, you can sprinkle some crushed pistachios on top of the financiers before baking. This will add a lovely crunchy contrast to the soft texture of the batter.
