Marbled Waffles and Pear Chocolate Jam"


2 eggs

500mL of milk

300g of flour

10g of fresh yeast or 3g of dry yeast

15g of sugar

60mL of water

150g of butter

A pinch of salt

2 teaspoons of 100% cocoa powder2 eggs


In a glass, pour 60mL of lukewarm (not hot) water, 3g of dry yeast, and 15g of sugar. Mix and let it sit for 10 to 15 minutes.

Melt 150g of butter and set aside.

In a large bowl, pour 300g of flour, 2 eggs, and 500mL of milk.

Gently whisk until the batter is smooth and free of lumps.

Add a pinch of salt, 150g of melted butter, and the yeast mixture from the glass.

Mix until you get a smooth batter.

Divide the batter into two portions and add two teaspoons of cocoa powder to one of the portions.

Mix until smooth.

Cover the bowls with a cloth and let the batter rise for at least 2 hours, and up to 4 hours depending on the room temperature.

Preheat the waffle iron and pour half a ladle of each batter for each waffle. Make sure to pour enough batter to make deliciously thick waffles. Close the waffle iron and adjust the cooking time to achieve golden and crispy waffles!
