Chocolate Muffins with Speculoos Spread


  • 125g flour
  • 1 egg
  • 40g melted butter
  • 0.5 sachet vanilla sugar
  • 0.5 handfuls chocolate chips
  • 75g brown sugar
  • 10cl milk
  • 0.5 sachet baking powder
  • 0.5 pinch of salt
  • 6 tsp speculoos


  1. Preheat the oven to 180°C
  2. Beat the eggs with the brown sugar and vanilla sugar in a bowl.
  3. Add the flour, baking powder, salt, milk and melted butter and mix well until you have a smooth dough
  4. Add the chocolate chips to the mixture and stir well
  5. Pour half of the mixture into silicone or buttered muffin tins
  6. Place 1 teaspoon of speculoos spread in each mould.Cover with the remaining mixture
  7. Bake for around 20 minutes until the muffins are golden brown
  8. Leave to cool when removed from the oven, then turn out of the tin
  9. Store the muffins in an airtight tin until ready to eat.
