Recipe for exotic samosas and guava jam

Ingredients

Ingredients:

  • 8 sheets of filo pastry
  • 1/2 ripe pineapple
  • 1/2 ripe mango
  • 2 handfuls of raisins
  • 20g of butter
  • 3 large tablespoons of guava jam from La Chambre aux Confitures
  • A little almond powder

Equipment:

  • Paring knife
  • Frying pan
  • Colander
  • Cooking brush

Instructions

Cut the fruits into small cubes, add the raisins. Melt a knob of butter in a frying pan, then add the diced mango and pineapple, along with the raisins. Pour in the guava jam and coat the fruits well. Let them barely caramelize to preserve the jam's flavor. Drain the fruits in a colander over a bowl to collect the juice. Take a sheet of filo pastry and sprinkle with some almond powder to absorb excess juice. Place a tablespoon of fruits on the pastry and fold into a triangle (various folding techniques are available online). Brush the samosas with beaten egg whites (or oil, or egg yolks - each has its own technique) and bake for 15 minutes at 180ºC (350ºF). Enjoy warm or cold, as dessert, snack, picnic treat, or anytime snack!
